Description

Hungarian Chicken Paprikash is a hearty and comforting dish featuring tender chicken simmered in a creamy paprika-infused sauce. A traditional Hungarian favorite, it’s typically served with egg noodles or dumplings and is full of bold, savory flavor.


Ingredients

  • 4 bone-in, skin-on chicken thighs or drumsticks
  • 1 tablespoon oil or butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Hungarian sweet paprika
  • 1 1/2 cups chicken broth
  • 1/2 cup sour cream
  • 1 tablespoon all-purpose flour
  • Salt and black pepper, to taste
  • Optional: 1 bell pepper, sliced
  • Optional: 1 tomato, chopped
  • Chopped fresh parsley, for garnish

Instructions

  1. Season chicken with salt and pepper.
  2. Heat oil or butter in a large skillet or Dutch oven over medium-high heat. Sear chicken on both sides until golden brown, about 5–6 minutes per side. Remove and set aside.
  3. In the same pan, sauté onions until soft and translucent, about 5–7 minutes.
  4. Add garlic and cook for 30 seconds.
  5. Stir in paprika (and optional bell peppers or tomatoes). Cook for 1 minute to bloom the spice.
  6. Return chicken to the pan and pour in chicken broth.
  7. Bring to a simmer, reduce heat to low, cover, and cook for 25–30 minutes, until chicken is tender.
  8. In a small bowl, mix sour cream with flour. Add a few spoonfuls of hot broth to temper, then stir into the pan.
  9. Simmer uncovered for another 5–10 minutes until sauce thickens.
  10. Garnish with chopped parsley and serve hot over noodles or dumplings.

Notes

  • Use high-quality Hungarian sweet paprika for the most authentic flavor.
  • Tempering the sour cream prevents curdling in the sauce.
  • For a vegetarian version, use mushrooms and vegetable broth.
