Description

Ingredients

2 tablespoons butter

1 medium onion, finely chopped

3 cups mushrooms, sliced (preferably cremini or white mushrooms)

1 teaspoon paprika (preferably Hungarian)

1 teaspoon dried thyme

4 cups vegetable broth (or chicken broth)

1 cup sour cream

2 tablespoons flour

1 tablespoon lemon juice

Salt and pepper to taste

Fresh dill for garnish (optional)


Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the sliced mushrooms, paprika, and thyme, cooking until the mushrooms release their moisture and begin to soften, about 8 minutes.
  4. Sprinkle the flour over the mushrooms and stir to coat evenly. Cook for another minute.
  5. Gradually pour in the vegetable broth, stirring constantly to avoid lumps. Bring to a simmer.
  6. Let the soup simmer for 10-15 minutes, until the broth thickens slightly and the mushrooms are tender.
  7. Reduce the heat to low and stir in the sour cream, mixing until the soup is smooth and creamy.
  8. Add lemon juice, and season with salt and pepper to taste.
  9. Serve hot, garnished with fresh dill if desired.
