Description

Kashmiri Pink Chai, also known as Noon Chai or Sheer Chai, is a vibrant and aromatic traditional beverage from Kashmir. This creamy, spiced tea gets its signature pink color from the unique brewing process, which involves baking soda, green tea, cinnamon, and cardamom. Perfect for cozy evenings or special occasions, Kashmiri Pink Chai is an experience in every sip, offering a delicate balance of sweetness, saltiness, and spice. Learn how to make this soothing, flavorful drink at home with this simple recipe.

Ingredients

2 cups water

2 teaspoons green tea leaves (preferably Kashmiri tea leaves)

12 cinnamon sticks

45 cardamom pods

1/4 teaspoon baking soda

1 cup whole milk

2 tablespoons sugar (optional)

A pinch of salt (optional, for traditional salty version)

Instructions

  • Boil water in a pot. Once boiling, add the green tea leaves, cinnamon sticks, and cardamom pods. Simmer for 5-7 minutes on low heat.

  • Add baking soda and stir gently. The tea will froth up; continue stirring until the color changes to reddish-brown.

  • Add milk and bring the tea to a boil, stirring occasionally.

  • Reduce heat and simmer for another 10-15 minutes until the tea turns a soft pink color.

  • Strain the tea into cups and add sugar to taste, or a pinch of salt for a savory, traditional version.

Notes

  1. For a sweet version, adjust the sugar to your taste.
  2. If you prefer a salty chai, skip the sugar and add a pinch of salt.
  3. For a vegan option, use almond, oat, or coconut milk.
