Ingredients

Marshmallows:

  • 0.5 Cup Xylitol
  • 3 Tablespoons Water
  • 2 teaspoons Gelatine Powder

Sweet Chaffles:

  • 2 Tablespoons Almond Flour
  • 1 Tablespoon Protein Powder – Unflavored
  • 0.5 teaspoon Baking Powder
  • 1 Large Egg
  • 0.5 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon
  • 1 Tablespoon Sugar Substitute
  • 1/4 Cup Cream Cheese

Chocolate Ganache:

  • 0.5 Cups Sugar-Free Chocolate
  • 4 teaspoons Cocoa Butter


Instructions

  1. Make Sweet Chaffles: Using a Dash Mini Maker, prepare the sweet chaffles first by combining the almond flour, protein powder, baking powder, egg, vanilla extract, cinnamon, sugar substitute, and cream cheese. Cook in the mini maker until golden and set aside.
  2. Prepare Marshmallow Fluff: While chaffles are cooking or cooling, make the keto marshmallow fluff by heating xylitol, water, and gelatin powder, whipping until fluffy to create the marshmallow mixture.
  3. Assemble Chaffle with Marshmallow: Take one sweet chaffle and use a spatula to spread the marshmallow fluff evenly on top with circular motions, creating a thick layer.
  4. Top and Press: Cover this chaffle with another sweet chaffle and gently press them together to evenly sandwich the marshmallow inside. Use a knife edge to even out the sides for a clean finish.
  5. Let Rest: Allow the chaffle sandwiches filled with marshmallow to rest for a few minutes to set while you prepare the chocolate ganache.
  6. Melt Chocolate Ganache: Melt the sugar-free chocolate and cocoa butter together either in an Instant Pot using the melt function or in a double boiler until smooth and fully melted.
