Ingredients
Dry Ingredients
- 1 ¾ cups all-purpose flour
- ½ teaspoon baking powder
Wet Ingredients
- ¾ cup salted butter (softened or 1 ½ sticks)
- 1 ½ cups granulated sugar
- 2 large eggs (lightly beaten)
- 2 teaspoons vanilla extract
Add-ins
- 4 packs Kit Kat (45 grams each) or 15 treat-sized (12 grams each), roughly chopped
Others
- Cooking spray
- Parchment paper
Instructions
- Prepare the Pan: Line an 8×8 inch baking pan with parchment paper, making sure to leave at least two long sides overhanging for easy removal of the cookie bars after baking. Preheat your oven to 350°F (175°C).
- Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour and baking powder until well combined. Set aside.
- Cream Butter and Sugar: Using a stand mixer fitted with a paddle attachment or dough hook, cream the softened salted butter and granulated sugar on low speed for about 5 minutes, until the mixture is light and fluffy.
- Add Eggs and Vanilla: Slowly pour in the lightly beaten eggs and vanilla extract, mixing on low for 1 minute until incorporated.
- Combine Dry Ingredients: Gradually add the flour and baking powder mixture to the wet ingredients while running the mixer on low speed. Continue mixing for about 2 minutes to ensure everything is fully blended.
- Fold in Kit Kat: Using a spoon or spatula, fold in the chopped Kit Kat pieces. Adding them in two batches helps distribute them evenly throughout the dough. You may reserve a few pieces to sprinkle on top if desired.
- Spread Dough in Pan: The dough will be sticky and thick. Drop spoonfuls of dough evenly across the prepared pan and use a spatula or the back of a spoon to gently smooth the surface as best as possible.
- Bake: Place the pan in the preheated oven and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean but with some moist crumbs clinging to it.
- Cool and Serve: Remove the pan from the oven and cool the cookie bars completely on a wire rack. Use the parchment paper overhang to lift the bars out of the pan, then cut into 16 servings and enjoy!
Notes
- To make removal easier, ensure enough parchment paper overhang on two sides of the pan.
- Check the bars starting at 50 minutes as ovens may vary; avoid overbaking to keep bars moist.
- Roughly chopping the Kit Kat bars keeps varied chunk sizes for an appealing texture.
- You can press a few Kit Kat pieces on top of the dough before baking for extra chocolatey visual appeal.
- Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
