Instructions

  1. Prepare the Pan: Line an 8×8 inch baking pan with parchment paper, making sure to leave at least two long sides overhanging for easy removal of the cookie bars after baking. Preheat your oven to 350°F (175°C).
  2. Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour and baking powder until well combined. Set aside.
  3. Cream Butter and Sugar: Using a stand mixer fitted with a paddle attachment or dough hook, cream the softened salted butter and granulated sugar on low speed for about 5 minutes, until the mixture is light and fluffy.
  4. Add Eggs and Vanilla: Slowly pour in the lightly beaten eggs and vanilla extract, mixing on low for 1 minute until incorporated.
  5. Combine Dry Ingredients: Gradually add the flour and baking powder mixture to the wet ingredients while running the mixer on low speed. Continue mixing for about 2 minutes to ensure everything is fully blended.
  6. Fold in Kit Kat: Using a spoon or spatula, fold in the chopped Kit Kat pieces. Adding them in two batches helps distribute them evenly throughout the dough. You may reserve a few pieces to sprinkle on top if desired.
