Description

A vibrant and refreshing Kiwi Pineapple Salsa combining the sweetness of pineapple and kiwifruit with the zing of jalapeño, perfect as a dip or topping for grilled meats and fish.


Ingredients

Fruits

  • 1/2 large firm avocado, cut into chunks (just very slightly ripe)
  • 1 1/2 cups diced pineapple
  • 1 cup peeled & diced Zespri SunGold Kiwifruit (about 2 kiwifruit)

Vegetables & Herbs

  • 1 red bell pepper, finely diced
  • 1/4 cup finely diced red onion
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh chopped cilantro

Seasoning

  • Zest and juice of 1 small lime
  • Salt and pepper to taste


Instructions

  1. Prepare Ingredients: Peel and dice the SunGold kiwifruit and pineapple, finely dice the red bell pepper and red onion, seed and mince the jalapeño, chop the cilantro, and cut the avocado into chunks.
  2. Combine Ingredients: Place the avocado, pineapple, kiwifruit, red bell pepper, red onion, jalapeño, and cilantro in a medium bowl.
  3. Add Lime and Season: Add the zest and juice of one small lime to the bowl, then season with salt and pepper to taste.
  4. Mix Gently: Stir everything gently but thoroughly to combine all flavors without mashing the avocado too much.
  5. Serve: Garnish with extra chopped cilantro if desired. Serve immediately with tortilla chips, or use as a topping for salmon, fish tacos, or grilled chicken.
