Instructions
- Prepare the apple filling: Peel and slice the apples evenly. Place them in a large saucepan and add lemon juice, sugar, flour, cinnamon, vegan butter, and vanilla extract. Cook over medium heat, stirring frequently, for 10-15 minutes until the apples are softened. Remove from heat and allow the mixture to cool.
- Prepare the bottom crust: Preheat your oven to 200°C (390°F). On a floured surface, roll out one vegan pie crust to about 12 inches in diameter. Transfer it carefully to a 9-inch pie pan, trimming any excess dough from the edges.
- Assemble the pie: Spoon the cooled apple filling into the prepared crust, mounding slightly in the center. Roll out the second pie crust and cut into strips to create a lattice pattern or place the whole crust on top with slits cut for steam to escape. Arrange the crust strips over the filling in a lattice or place the full top crust and cut slits.
- Brush the crust: Lightly brush the top crust with non-dairy milk to promote browning and a shiny finish during baking.
- Bake the pie: Bake for approximately 40 minutes or until the crust is golden brown and the filling is bubbly. Cover the edges with foil or a pie shield if they brown too quickly. Once baked, allow the pie to cool at room temperature for 30 minutes before serving.
