Ingredients

1 cup rolled oats

1/2 cup chia seeds

1/4 cup shredded coconut

1/4 cup lemon juice

2 tbsp lemon zest

1 tbsp fresh grated ginger

1/4 cup honey or maple syrup

1/4 cup almond butter (or peanut butter)

1/2 tsp vanilla extract

Pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking dish (about 8×8 inches) with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, chia seeds, shredded coconut, lemon zest, and a pinch of salt.
