Description
Low-calorie air fryer zucchini fries that are crispy on the outside and tender on the inside, offering a healthier alternative to traditional French fries.
Ingredients
2 medium zucchinis
1/2 cup breadcrumbs (preferably whole wheat)
1/4 cup grated Parmesan cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried oregano
Salt and pepper, to taste
1 egg, beaten
Cooking spray
Instructions
- Wash and dry the zucchinis. Cut them into long, thin strips resembling fries.
 - In a shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper.
 - In a separate bowl, beat the egg.
 - Dip each zucchini strip into the egg, making sure it’s fully coated, then dredge it in the breadcrumb mixture until well-coated.
 - Preheat your air fryer to 400°F (200°C).
 - Spray the air fryer basket with cooking spray to prevent sticking. Place the zucchini fries in a single layer in the basket, ensuring they don’t overlap.
 - Air fry the zucchini fries for 8-10 minutes, flipping them halfway through, until they are golden and crispy.
 - Once done, remove from the air fryer and serve immediately with your favorite dipping sauce.

Notes
- For extra crispiness, spray the fries with more cooking spray before air frying.
 - For a gluten-free option, use gluten-free breadcrumbs or almond flour.
 - Store leftovers in an airtight container for up to 2-3 days.
 - Reheat in the air fryer at 350°F (175°C) for 3-5 minutes for crispy fries.
