Description

Low-calorie air fryer zucchini fries that are crispy on the outside and tender on the inside, offering a healthier alternative to traditional French fries.


Ingredients

2 medium zucchinis

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp dried oregano

Salt and pepper, to taste

1 egg, beaten

Cooking spray


Instructions

  1. Wash and dry the zucchinis. Cut them into long, thin strips resembling fries.
  2. In a shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper.
  3. In a separate bowl, beat the egg.
  4. Dip each zucchini strip into the egg, making sure it’s fully coated, then dredge it in the breadcrumb mixture until well-coated.
  5. Preheat your air fryer to 400°F (200°C).
  6. Spray the air fryer basket with cooking spray to prevent sticking. Place the zucchini fries in a single layer in the basket, ensuring they don’t overlap.
  7. Air fry the zucchini fries for 8-10 minutes, flipping them halfway through, until they are golden and crispy.
  8. Once done, remove from the air fryer and serve immediately with your favorite dipping sauce.

Notes

  1. For extra crispiness, spray the fries with more cooking spray before air frying.
  2. For a gluten-free option, use gluten-free breadcrumbs or almond flour.
  3. Store leftovers in an airtight container for up to 2-3 days.
  4. Reheat in the air fryer at 350°F (175°C) for 3-5 minutes for crispy fries.
