Ingredients
Dry Ingredients
- 120g (2¼ cups) plain flour
- 62g (8 tbsp) malted milk powder
- 24g (2 tbsp) light brown sugar
- 8g (2 tsp) baking powder
- 8g (2 tsp) bicarbonate of soda
Wet Ingredients
- 500ml (2 cups) milk
- 2 large eggs
- 75g (⅓ cup) butter, melted
- 5ml (1 tsp) vanilla bean paste
Other
- Butter, for greasing the waffle iron
Instructions
- Mix dry ingredients: Place the plain flour, malted milk powder, light brown sugar, baking powder, and bicarbonate of soda into a large mixing bowl. Stir well until all ingredients are evenly combined to ensure an even distribution of the leavening agents and flavor.
- Whisk wet ingredients: In a separate large bowl, pour in the milk, crack in the eggs, add the melted butter, and vanilla bean paste. Use an electric mixer to whisk these ingredients together until fully blended and slightly frothy.
- Combine wet and dry mixtures: With the mixer running at a low speed, gradually add the dry ingredient mixture spoonful by spoonful into the wet mixture. Continue mixing gently until a smooth batter forms without lumps, ready for cooking.
- Preheat and grease waffle iron: Heat your waffle iron according to the manufacturer’s instructions. Once hot, grease the surface quickly by swiping it with a block of butter to prevent sticking and to add flavor.
- Cook the waffles: Ladle batter onto the center of the preheated waffle iron, spread it evenly with a spatula, and close the iron. Cook each waffle for approximately 7 minutes or until golden brown and crisp. Carefully remove the waffle and repeat the process with the remaining batter.
- Serve and enjoy: Present the waffles warm topped with ice cream, fresh berries, and a drizzle of golden syrup for a sweet, indulgent breakfast or brunch treat.
Notes
- For fluffier waffles, avoid overmixing the batter once combining the wet and dry ingredients.
- If you don’t have vanilla bean paste, vanilla extract can be substituted.
- Waffles can be kept warm in a low oven (about 90°C/200°F) while finishing the batch.
- Butter for greasing the waffle iron can be replaced with a non-stick spray if preferred.
- Leftover waffles can be frozen and reheated in a toaster or oven for a quick breakfast.
