Description

A delicious no-bake Maltesers Rocky Road recipe combining creamy milk and dark chocolate with crunchy Maltesers and soft mini marshmallows, topped with white chocolate and extra Maltesers for a perfect treat that sets in the fridge.


Ingredients

Chocolate Mixture

  • 150 g Butter
  • 200 g Milk chocolate
  • 200 g Dark chocolate
  • 4 tbsp Golden syrup

Add-Ins

  • 300 g Maltesers
  • 180 g Mini marshmallows

Topping

  • 200 g White chocolate
  • 100 g Maltesers


Instructions

  1. Melt the Chocolate Mixture: In a heatproof bowl, gently melt the butter, milk chocolate, dark chocolate, and golden syrup together, stirring thoroughly to combine everything into a smooth and glossy mixture.
  2. Mix in Maltesers and Marshmallows: Allow the melted chocolate mixture to cool slightly so it doesn’t melt the additions. Then fold in 300 g of Maltesers and all of the mini marshmallows evenly throughout the chocolate.
  3. Prepare the Tin and Press Mixture: Line a 20cm x 20cm square baking tin with baking paper. Transfer the chocolate mixture into the tin and press it down firmly and evenly using the back of a spoon or spatula.
  4. Add White Chocolate and Extra Maltesers: Melt the white chocolate separately. Pour it evenly over the chocolate mixture in the tin and then press the remaining 100 g of Maltesers on top to decorate and add extra crunch.
  5. Chill to Set: Place the tin into the fridge and allow the rocky road to set completely for at least a couple of hours until firm.
  6. Cut and Serve: Once set, remove the rocky road from the tin using the baking paper. Cut into small, bite-sized chunks with a very sharp knife for serving.

Notes

  • Be careful not to overheat the chocolate when melting; use gentle heat or a double boiler to avoid burning.
  • Line the baking tin well with baking paper for easy removal.
  • Press the mixture firmly into the tin to help it set well and hold together when cut.
  • Use a sharp knife warmed under hot water and wiped dry for clean cuts.
  • Store leftovers in an airtight container in the fridge for up to one week.
