Ingredients

Tapioca Pearls

  • 1/2 cup uncooked tapioca pearls
  • Water (for boiling and soaking)

Mango Mixture

  • 3 medium ripe mangoes
  • 1 cup unsweetened coconut milk
  • 1/4 cup sweetened condensed milk
  • 1/2 teaspoon vanilla extract (optional)


Instructions

  1. Cook the Tapioca Pearls: In a medium saucepan, bring a generous amount of cold water to a boil, ensuring there’s enough for the pearls to move freely. Gently stir in the tapioca pearls and reduce heat to a simmer. Cook for 15 to 20 minutes, stirring occasionally to prevent clumps. The pearls are ready when most turn translucent with a tiny white dot in the center.
  2. Rinse and Soak: Drain the cooked tapioca in a fine mesh strainer, rinse under cold water to halt cooking and cool them. Transfer the pearls into a bowl of cold water and set aside while preparing the mango mixture.
  3. Prepare the Mango: Peel the mangoes and slice around the pit to extract the flesh. Reserve a handful of mango chunks for garnish. The remaining mango flesh will be blended.
  4. Blend the Mango Mixture: In a blender, combine the mango chunks, coconut milk, sweetened condensed milk, and vanilla extract (if using). Blend until smooth and creamy. Pour the mixture into a large bowl. Chill in the refrigerator for at least one hour if you prefer a cold dessert.
  5. Serve: Drain the soaked tapioca pearls and gently fold them into the chilled mango mixture. Spoon the dessert into individual bowls or cups and top with the reserved mango chunks for an appealing finish. Enjoy immediately.
