Ingredients
For the Whipped Cream
- 16 oz whipping cream
- Zest of 1 lime
- 2-3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 0.3 oz Cointreau or triple sec
For the Cake Layer
- 1 storebought pound cake (cut into ½-¾ inch slices, then cubed)
Garnish
- Lime zest
- Lime wheel
Instructions
- Prepare the Lime Whipped Cream: In a mixing bowl, combine the heavy whipping cream, vanilla extract, lime zest, powdered sugar, and Cointreau or triple sec. Using a hand mixer or standing mixer, whip the mixture for less than one minute until soft peaks form. The whipped cream should be soft and ‘drippy,’ not stiff, to ensure easy scooping and layering.
- Cut the Pound Cake: Slice the storebought pound cake into ½ to ¾ inch thick slices. Then, cut these slices into small cubes, suitable for layering in the trifles.
- Assemble the Trifles: Begin layering your trifles by placing a layer of pound cake cubes at the bottom of each serving dish or glass. Add a layer of the lime whipped cream on top of the cake cubes. Repeat by adding another layer of cake cubes, followed by a final layer of whipped cream to finish.
- Garnish: Sprinkle lime zest over the top layer of whipped cream and place a lime wheel on each trifle for an attractive, fresh garnish.
- Chill and Serve: Cover the trifles and store them in the refrigerator until ready to serve. When covering with lids, level the whipped cream to prevent squishing, and consider placing the lime wheel flat on top before sealing to protect the whipped cream.
Notes
- Adjust the amount of powdered sugar in the whipped cream to your taste preference.
- To prevent the whipped cream from being squished when covering, level it carefully and place a lime wheel flat on top before closing with a lid.
- These trifles can be prepared in advance and kept refrigerated for several hours or overnight to allow flavors to meld.
