Description

Marry Me Salmon is a flavorful, easy-to-make dish featuring perfectly cooked salmon fillets topped with a creamy, savory sauce made with garlic, sun-dried tomatoes, and parmesan. It’s a crowd-pleasing, indulgent meal perfect for any occasion.


Ingredients

4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

Salt and pepper to taste

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

1 tablespoon Dijon mustard

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1 tablespoon fresh basil, chopped (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Season the salmon fillets with salt and pepper.
  3. Once the skillet is hot, add the salmon fillets and cook for 3-4 minutes on each side until golden brown. Remove the salmon and set it aside.
  4. In the same skillet, add garlic and cook for about 30 seconds until fragrant.
  5. Add the sun-dried tomatoes and cook for another 1-2 minutes.
  6. Pour in the heavy cream, Parmesan cheese, Dijon mustard, dried basil, and oregano. Stir until the sauce thickens and becomes creamy, about 3-5 minutes.
  7. Return the salmon fillets to the skillet, spoon some of the sauce over them, and transfer the skillet to the oven. Bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Remove from the oven, garnish with fresh basil, and serve with the creamy sauce spooned over the top.

Notes

  1. For a spicy version, add a pinch of red pepper flakes or a dash of hot sauce to the cream sauce.
  2. For a citrusy twist, add some freshly squeezed lemon juice and zest to the sauce.
  3. If you’re vegetarian, you can substitute salmon with roasted portobello mushrooms for a delicious alternative.
  4. Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat gently in a skillet or microwave.
