Description

  1. The Mexican Omelette is a flavorful and protein-packed breakfast dish filled with vibrant vegetables, melted cheese, and a touch of spice from jalapeños. It’s quick to prepare and perfect for any time of day.

Ingredients

  1. 3 large eggs
  2. 1 tablespoon milk or cream (optional)
  3. 1/4 cup diced tomato
  4. 2 tablespoons diced onion
  5. 1 tablespoon diced jalapeño or green chili (adjust to taste)
  6. 1/4 cup diced bell pepper
  7. 1/4 cup shredded cheddar or Mexican cheese blend
  8. 1 tablespoon butter or oil
  9. Salt, to taste
  10. Black pepper, to taste
  11. Optional toppings: chopped cilantro, sliced avocado, sour cream, hot sauce

Instructions

  1. Crack the eggs into a bowl and whisk with salt, pepper, and milk or cream if using.
  2. Heat butter or oil in a nonstick skillet over medium heat.
  3. Add diced onion, bell pepper, and jalapeño. Sauté for 3–4 minutes until softened.
  4. Add chopped tomato and cook for another minute.
  5. Pour the egg mixture into the skillet and tilt the pan to spread it evenly.
  6. Gently lift the edges of the omelette with a spatula as it cooks to allow uncooked egg to flow underneath.
  7. Sprinkle shredded cheese evenly over the eggs as they begin to set.
  8. When the omelette is mostly cooked but still slightly creamy on top, carefully fold it in half.
  9. Cook for 1 more minute, then transfer to a plate.
  10. Top with optional garnishes like cilantro, avocado, sour cream, or hot sauce and serve immediately.

Notes

  • Adjust spice level by adding more or less jalapeño or using milder green chilies.
  • For extra protein, add cooked chorizo, bacon, or black beans.
  • Make it dairy-free by omitting cheese and milk or using plant-based alternatives.
  • Use a nonstick skillet to prevent sticking and ensure easy folding.
