Mexican White Trash Casserole is a cheesy, flavorful, and easy-to-make dish that combines the best of Mexican-inspired comfort food. Perfect for feeding a crowd or satisfying a hungry family.
Ingredients
1 lb ground beef
1 packet taco seasoning
1 can cream of chicken soup
1 can diced tomatoes with green chilies
1 can black beans, drained and rinsed
1 bag (8 oz) tortilla chips, crushed
2 cups shredded cheddar cheese
1 cup sour cream
1 cup frozen corn (optional)
1 small onion, diced
1 bell pepper, diced
1 cup salsa
Instructions
- Preheat your oven to 350°F (175°C).
 - In a large skillet over medium heat, cook the ground beef with diced onion and bell pepper until the beef is browned and the vegetables are softened.
 - Stir in the taco seasoning, black beans, diced tomatoes with green chilies, and salsa. Let it simmer for 5 minutes.
 - In a greased 9×13-inch casserole dish, layer the crushed tortilla chips, followed by the beef mixture, and then spread a layer of sour cream over the beef.
 - Top with shredded cheddar cheese and a sprinkling of frozen corn if desired.
 - Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
 - Let the casserole cool slightly before serving. Enjoy!

- For extra heat, add jalapeños or spicy salsa.
