Description

Mexican White Trash Casserole is a cheesy, flavorful, and easy-to-make dish that combines the best of Mexican-inspired comfort food. Perfect for feeding a crowd or satisfying a hungry family.


Ingredients

1 lb ground beef

1 packet taco seasoning

1 can cream of chicken soup

1 can diced tomatoes with green chilies

1 can black beans, drained and rinsed

1 bag (8 oz) tortilla chips, crushed

2 cups shredded cheddar cheese

1 cup sour cream

1 cup frozen corn (optional)

1 small onion, diced

1 bell pepper, diced

1 cup salsa


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef with diced onion and bell pepper until the beef is browned and the vegetables are softened.
  3. Stir in the taco seasoning, black beans, diced tomatoes with green chilies, and salsa. Let it simmer for 5 minutes.
  4. In a greased 9×13-inch casserole dish, layer the crushed tortilla chips, followed by the beef mixture, and then spread a layer of sour cream over the beef.
  5. Top with shredded cheddar cheese and a sprinkling of frozen corn if desired.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Let the casserole cool slightly before serving. Enjoy!
