Description
Monster Cookie Bars are thick, chewy dessert bars packed with peanut butter, oats, chocolate chips, and colorful candy-coated chocolates. A fun, easy, and satisfying treat perfect for parties, bake sales, or anytime snacking.
Ingredients
- 2 cups old-fashioned rolled oats
 - 1 1/4 cups all-purpose flour
 - 1 tsp baking soda
 - 1/2 tsp salt
 - 1/2 cup unsalted butter, softened
 - 3/4 cup creamy peanut butter
 - 1 cup brown sugar
 - 1/2 cup granulated sugar
 - 2 large eggs
 - 2 tsp vanilla extract
 - 1 cup semisweet chocolate chips
 - 1 cup candy-coated chocolate pieces (like M&M’s), divided
 
Instructions
Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
- In a medium bowl, whisk together oats, flour, baking soda, and salt.
 - In a large bowl, cream together butter, peanut butter, brown sugar, and granulated sugar until smooth and fluffy.
 - Beat in eggs and vanilla until well combined.
 - Gradually add the dry ingredients to the wet ingredients and mix until just combined.
 - Fold in chocolate chips and most of the candy-coated chocolates, reserving some for topping.
 - Spread the dough evenly in the prepared pan. Press the remaining candy pieces on top.
 - Bake for 25–30 minutes, or until golden brown around the edges and just set in the center.
 - Allow to cool completely in the pan before slicing into bars.
 
Notes
- Don’t overbake—bars continue to set as they cool.
 - Use parchment paper for easy removal and clean slicing.
 - Customize with different candy colors for holidays or events.
 - Store in an airtight container at room temperature for up to 5 days or freeze for longer storage.
