A quick and easy no-bake strawberry cheesecake served in individual jars, featuring a creamy filling, a graham cracker crust, and fresh macerated strawberries for a delightful contrast of textures and flavors.
Ingredients
1 cup graham cracker crumbs
3 tbsp unsalted butter, melted
8 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup heavy whipping cream
2 tbsp sugar
1 1/2 cups fresh strawberries, chopped
2 tbsp sugar (for macerating the strawberries)
Instructions
- Prepare the Graham Cracker Crust: In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined. Spoon about 2 tablespoons of the graham cracker mixture into the bottom of each jar and gently press down to create an even layer. Set aside.
- Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. In a separate bowl, whip the heavy whipping cream and sugar together until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
- Macerate the Strawberries: In a small bowl, toss the chopped strawberries with 2 tablespoons of sugar. Let them sit for about 10 minutes to release their juices.
- Assemble the Jars: Spoon a generous amount of cheesecake filling on top of the graham cracker crust in each jar. Follow with a spoonful of the macerated strawberries. Repeat with another layer of cheesecake filling and top with more strawberries.
- Chill and Serve: Refrigerate the jars for at least 2 hours (or overnight) to allow the flavors to meld together. Serve chilled and enjoy!
Notes
- For a gluten-free version, use gluten-free graham crackers or cookies for the crust.
- Feel free to replace the strawberries with other berries for a mixed berry version.
