Description

A quick and easy no-bake strawberry cheesecake served in individual jars, featuring a creamy filling, a graham cracker crust, and fresh macerated strawberries for a delightful contrast of textures and flavors.


Ingredients

1 cup graham cracker crumbs

3 tbsp unsalted butter, melted

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

2 tbsp sugar

1 1/2 cups fresh strawberries, chopped

2 tbsp sugar (for macerating the strawberries)


Instructions

  1. Prepare the Graham Cracker Crust: In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined. Spoon about 2 tablespoons of the graham cracker mixture into the bottom of each jar and gently press down to create an even layer. Set aside.
  2. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. In a separate bowl, whip the heavy whipping cream and sugar together until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
  3. Macerate the Strawberries: In a small bowl, toss the chopped strawberries with 2 tablespoons of sugar. Let them sit for about 10 minutes to release their juices.
  4. Assemble the Jars: Spoon a generous amount of cheesecake filling on top of the graham cracker crust in each jar. Follow with a spoonful of the macerated strawberries. Repeat with another layer of cheesecake filling and top with more strawberries.
  5. Chill and Serve: Refrigerate the jars for at least 2 hours (or overnight) to allow the flavors to meld together. Serve chilled and enjoy!

  1. For a gluten-free version, use gluten-free graham crackers or cookies for the crust.
  2. Feel free to replace the strawberries with other berries for a mixed berry version.
