  • 1 teaspoon salt
  • 1/2 cup unsalted butter (melted)
  • 1 egg (room temperature)
  • 1 egg yolk (room temperature)

Filling

  • 7 tablespoons unsalted butter (room temperature)
  • 1 tablespoon ground cinnamon
  • 2/3 cup Nutella

Frosting

  • 1 1/4 cups powdered sugar
  • 8 ounces cream cheese (room temperature)
  • 2 teaspoons pure vanilla extract
  • 1/8 teaspoon salt


Instructions

  1. Activate Yeast: Start by mixing the instant active yeast with warm milk (about 105°F) in a small bowl. Let it sit for 10 minutes until frothy, indicating the yeast is activated. Ensure the milk is not too hot to avoid killing the yeast.
  2. Mix Dough Ingredients: In a separate bowl, combine 2 cups of flour, brown sugar, salt, melted butter, egg, and egg yolk. Add the frothy yeast mixture and mix using a dough hook attachment on a stand mixer at medium speed for about 2 minutes. Scrape down the bowl with a spatula to ensure everything is incorporated.
  3. Add Remaining Flour and Knead: Gradually add the remaining 2 cups of flour—1 cup at a time—mixing at medium speed after each addition for approximately 10 minutes until the dough becomes sticky and begins to pull away from the bowl sides forming a ball. If mixing by hand, transfer dough to a floured surface and knead for 10 minutes until smooth and elastic.
  4. Perform Windowpane Test and First Rise: Take a small piece of dough and stretch it between your fingers; if it stretches thinly and becomes translucent without tearing, it’s ready. Place the dough ball into a greased bowl, turning to coat all sides. Cover with a kitchen towel. Preheat your oven to 200°F, turn it off, and place the covered dough inside to rise until doubled in size, about 1 hour.
  5. Roll Out and Add Filling: Punch down the risen dough to release air bubbles. On a lightly floured surface, roll the dough into a 12 x 18-inch rectangle. Spread softened butter for the filling evenly over the surface, leaving about an inch border on all sides. Sprinkle cinnamon evenly over the butter, then spread Nutella over the cinnamon layer, again leaving a one-inch border. Starting from the long edge, roll the dough tightly into a log and pinch the seam and edges to seal.
  6. Slice Rolls and Second Rise: Using unflavored dental floss, a very sharp knife, or serrated knife, slice the rolled dough into 12 even rolls.
