  • 225 g whole milk
  • 50 g fresh yeast (or 2 packs dry yeast)
  • 560-570 g all-purpose flour
  • 2 eggs
  • 50 g granulated sugar
  • 1 tsp salt
  • 1 tsp cardamom
  • 100 g butter (room temperature)

Filling Ingredients

  • 200 g Nutella
  • 50 g chocolate chips

Frosting Ingredients

  • 35 g butter (cold, room temperature)
  • 35 g Nutella
  • 35 g cream cheese
  • 125 g powdered sugar
  • 1 tsp vanilla extract


Instructions

  1. Prepare the Dough: Heat the milk until lukewarm (37ºC). Crumble the fresh yeast into a mixing bowl, add the warmed milk, and stir until the yeast dissolves. If using dry yeast, let it bloom according to package instructions.
  2. Mix Initial Dough: Add sugar, flour, eggs, salt, and cardamom. Using a dough hook, mix on medium speed for 3 minutes to combine ingredients.
  3. Add Butter Gradually: Continue mixing on medium speed and incorporate butter little by little, adding the next piece only after the previous one is fully absorbed.
  4. Knead Dough: Increase the mixer speed to high and knead for 6-7 minutes until the dough gathers and starts releasing from the bowl’s bottom.
  5. Final Kneading and First Rise: Turn the dough onto a countertop and knead briefly by hand to shape a smooth loaf. Place in a clean bowl, cover with cling film and a tea towel, and leave to rise in a warm area for 45 minutes until doubled in size.
  6. Roll Out and Assemble: Roll the dough on a floured surface into a large rectangle around 5mm thick. Spread Nutella evenly, sprinkle chocolate chips, and roll into a log.
  7. Cut Rolls: Trim uneven ends with thread, dental floss, or a serrated bread knife. Cut into 12 equal rolls.
  8. Second Rise: Arrange the rolls in a 23×33 cm parchment-lined baking tray, cover with cling film, and let rise for 30 minutes at room temperature.
  9. Preheat Oven: Preheat your conventional oven to 190ºC (375ºF).
  10. Bake: Bake the rolls for 22-25 minutes on the second lowest oven rack until lightly golden brown.
  11. Cool: Let the rolls cool for 15-20 minutes while preparing the frosting.
  12. Prepare Frosting: If in Europe, drain cream cheese on paper towels to remove moisture. Soften butter and cream cheese slightly. Cream butter and Nutella at high speed for 1-2 minutes. Add cream cheese and mix until smooth. Sift powdered sugar into the bowl, add vanilla extract, and blend until combined and smooth.
  13. Frost Rolls: Spread the frosting over the warm rolls with a spoon and sprinkle with additional chocolate chips.
