Ingredients
1 pie crust (store-bought or homemade)
1 ¾ cups whole milk
1 cup heavy cream
4 large egg yolks
2/3 cup granulated sugar
2 tablespoons unsweetened cocoa powder
1 ½ teaspoons cornstarch
½ teaspoon salt
4 ounces semisweet chocolate, chopped
2 tablespoons unsalted butter
1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C). Blind bake your pie crust according to package directions or until golden brown. Set aside to cool.
- In a medium saucepan, whisk together the milk, heavy cream, egg yolks, sugar, cocoa powder, cornstarch, and salt. Cook over medium heat, whisking constantly, until the mixture thickens and starts to bubble, about 8-10 minutes.
- Once thickened, remove the saucepan from the heat and add the chopped semisweet chocolate, butter, and vanilla extract. Stir until the chocolate and butter have melted completely and the filling is smooth.
- Pour the chocolate filling into the prepared pie crust, smoothing it out evenly with a spatula.
- Let the pie cool to room temperature, then refrigerate for at least 4 hours, or until set.
- Before serving, garnish with whipped cream or chocolate shavings if desired.
