Ingredients
1 lb beef sirloin or stew beef, cut into bite-sized pieces
1 medium onion, diced
2 cloves garlic, minced
1 cup mushrooms, sliced
2 tablespoons olive oil
1 teaspoon paprika
1 cup beef broth
1 ½ cups heavy cream
2 tablespoons Worcestershire sauce
2 teaspoons Dijon mustard
8 oz egg noodles
Salt and pepper, to taste
Fresh parsley, chopped (optional)
Instructions
- In a large pot, heat olive oil over medium-high heat. Add the beef and season with salt, pepper, and paprika. Brown the beef on all sides, about 5-7 minutes, then remove from the pot and set aside.
- In the same pot, add the onions and garlic. Cook for 2-3 minutes until softened.
- Add the sliced mushrooms and cook for an additional 4-5 minutes, until the mushrooms have released their moisture and begun to brown.
- Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well to combine and bring to a simmer.
- Add the egg noodles to the pot, stirring to ensure the noodles are submerged in the liquid.
- Reduce the heat to low and cover. Cook for 10-12 minutes, or until the noodles are tender, stirring occasionally.
- Once the noodles are cooked, return the beef to the pot, and add the heavy cream. Stir to combine, then cook for another 3-4 minutes until everything is heated through.
- Taste and adjust seasoning with salt and pepper if necessary.
- Garnish with fresh parsley and serve hot.
