Description

This One-Pot Chicken Parmesan Mac & Cheese combines creamy mac and cheese with savory chicken parmesan flavors. Cooked in one pot, it’s a time-saving, family-friendly dish that’s delicious and easy to prepare.


Ingredients

1 lb chicken breast, cut into bite-sized pieces

2 tbsp olive oil

1 onion, diced

2 cloves garlic, minced

1 cup marinara sauce

2 cups chicken broth

1 ½ cups heavy cream

2 cups elbow macaroni

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 tsp dried basil

1 tsp dried oregano

Salt and pepper, to taste

Fresh parsley, for garnish (optional)


Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook until browned on all sides and cooked through, about 6-8 minutes. Remove the chicken from the pot and set it aside.
  2. In the same pot, add the diced onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
  3. Pour in the marinara sauce, chicken broth, and heavy cream. Stir to combine.
  4. Add the elbow macaroni to the pot and bring the mixture to a simmer. Cook the macaroni according to the package instructions, about 8-10 minutes, stirring occasionally.
  5. Once the pasta is cooked, return the chicken to the pot. Stir in the shredded mozzarella and grated Parmesan cheese, and allow it to melt into the sauce until smooth and creamy.
  6. Stir in the dried basil and oregano. Taste and adjust seasoning with salt and pepper if needed.
  7. Garnish with fresh parsley if desired, and serve hot.

Notes

  1. Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  2. Reheat in a saucepan over low heat, adding a splash of milk or chicken broth to restore creaminess.
  3. For a spicy kick, add red pepper flakes or diced jalapeño.
  4. Frozen chicken can be used if thawed beforehand.
  5. Heavy cream can be substituted with half-and-half or a dairy-free alternative like coconut milk.
  6. This dish can be made ahead up to the point of adding cheese. Refrigerate and add cheese when ready to serve.
