Description

A hearty and flavorful one pot smoky vegan sausage casserole that combines smoky vegan sausages, colorful bell peppers, and tender butter beans in a rich tomato sauce. This wholesome casserole simmers gently to meld the spices and vegetables, creating a comforting and nutritious meal perfect for any day, served with boiled potatoes or cornbread for a satisfying finish.

Ingredients

Main Ingredients

  • 1 Teaspoon Olive Oil
  • 1 Onion, chopped
  • 4 Teaspoons (4 Cloves) Minced Garlic
  • 4 Vegan Sausages
  • 2 Red Peppers, sliced
  • 2 Yellow Peppers, sliced
  • 2 Teaspoons Homemade Vegetable Stock Powder (or 2 Teaspoons Bouillon Powder or 1 Stock Cube)
  • 1 Tablespoon Homemade BBQ Seasoning
  • 1 Tablespoon Homemade Italian Seasoning (or 1 Teaspoon Basil, 1 Teaspoon Oregano, 1 Teaspoon Parsley)
  • 2 Teaspoons Sea Salt
  • 2 15 Oz (400g) Cans Chopped Tomatoes
  • 2 Tablespoons Tomato Paste (Tomato Puree)
  • 1 Teaspoon Liquid Smoke (Optional)
  • 1 Can Butter Beans (Lima Beans), drained and rinsed

Side Dish Options

  • 560g Boiled Potatoes (140g per portion)
  • Or 4 Pieces Cornbread (1 Piece per portion)
  • 1 Green Onion (Salad Onion), chopped (for garnish)

Instructions

  1. Heat the Oil: Add the olive oil to a non-stick pan and set the heat to medium, allowing the oil to warm evenly to prepare for sautéing the vegetables and sausages.
  2. Add the Onion: Chop the onion finely and add it to the pan, allowing it to soften and become translucent, releasing its natural sweetness.
  3. Sauté Garlic and Brown Sausages: Stir in the minced garlic along with the vegan sausages. Cook the sausages until browned on both sides, stirring frequently to evenly cook the onions and garlic along with the sausages’ smoky flavors.
  4. Add Bell Peppers: Slice the red and yellow peppers and add them to the pan, stirring to combine and slightly soften the peppers while maintaining some texture.
  5. Season the Base: Sprinkle in the vegetable stock powder, BBQ seasoning, Italian seasoning, and sea salt, stirring well to coat all ingredients and build a flavorful base.
  6. Add Tomatoes and Beans: Pour in the chopped tomatoes, tomato paste, and optional liquid smoke, stirring thoroughly. Add the drained butter beans, mixing to incorporate them into the sauce.
  7. Simmer: Reduce the heat and allow the casserole to simmer gently for 10-15 minutes. This enables the flavors to meld together and the sauce to thicken slightly.
  8. Prepare Side Dish: While the casserole simmers, prepare your side dish by boiling the potatoes until tender or warming the cornbread to accompany the meal.
  9. Serve: Dish the smoky vegan sausage casserole into bowls, garnish with chopped green onion, and serve alongside your choice of boiled potatoes or cornbread for a complete, satisfying meal.

Notes

  • Use liquid smoke carefully as it adds intense smoky flavor—optional depending on taste preferences.
  • Homemade seasonings can be substituted with store-bought blends if necessary.
  • For a gluten-free option, choose cornbread made without wheat flour or serve with potatoes alone.
  • This dish reheats well and flavors intensify after resting.
  • Adjust salt levels if using stock powder or bouillon with high sodium content.
