Ingredients
Savoury Shortcrust Pastry
- 1 batch savoury shortcrust pastry
Filling
- 1 cup grated cheese
- 2 tablespoons oil
- 2 onions, thinly sliced
- 3 eggs
- Salt to taste
- Pepper to taste
- 1/2 cup milk
- 1 teaspoon dried parsley
Instructions
- Preheat Oven: Preheat your oven to 200°C (about 390°F) to prepare for baking the pastry and quiche filling.
- Prepare Pie Crust: Roll out the savoury shortcrust pastry and line it over a pie mold or tart tin. Prick the base with a fork to prevent bubbling during baking.
- Blind Bake Pastry: Bake the pastry shell in the preheated oven for 15 minutes until it is lightly golden and sets, forming a crisp base for the filling.
- Caramelize Onions: Heat the oil in a pan over medium heat, add the thinly sliced onions and cook them slowly until they become soft, sweet, and golden brown. Remove from heat and allow to cool.
- Mix Filling Base: In a bowl, beat together the eggs, milk, salt, and pepper until evenly combined, creating a creamy custard base.
- Add Cheese and Herbs: Stir in the grated cheese, cooled caramelized onions, and dried parsley into the egg mixture, ensuring everything is well mixed.
- Fill Pastry Shell: Pour the prepared filling over the blind-baked pastry shell, spreading it evenly.
- Bake Quiche: Return the filled pastry to the oven and bake for an additional 15 to 20 minutes until the filling is set, golden on top, and a knife inserted comes out clean.
- Cool and Serve: Remove the quiche from the oven, let it cool for about 5 minutes to set further, then unmold, slice, and serve warm or at room temperature for best texture and flavor.
Notes
- Make sure to prick the pastry base before blind baking to avoid air pockets.
- Using a mix of cheeses like Gruyère or cheddar can enhance the flavor.
- Caramelizing onions slowly is key to developing sweetness and depth in the quiche.
- You can prepare the pastry and caramelize onions in advance to save time on the day of baking.
- Allow the quiche to cool slightly before slicing to maintain its structure and make cutting easier.
