The recipe is simple and quick, requiring only a few ingredients and refrigeration to set.
Ingredients
Liquid Base
- 1 3/4 cups water
- 1/4 cup light cream
- 2 tbsp Joy Filled Eats Sweetener (or alternative sweetener of choice)
- 1-3 scoops Better Stevia (or any preferred stevia brand, to taste)
- 8 drops orange oil OR 1 tbsp orange extract (adjust to taste)
- 1 tsp vanilla extract
- 2 tbsp fresh squeezed orange juice (optional)
Gelling Agent
- 6 tbsp gelatin (equivalent to 8 packets)
Instructions
- Heat and Combine Liquids. In a saucepan, combine the water, light cream, sweetener, stevia, orange oil or extract, and vanilla extract. Warm the mixture until it is very warm but not boiling. Taste the liquid and adjust the flavors with more orange oil, vanilla, or sweetener as desired to suit your preferences.
- Dissolve Gelatin. Gradually whisk the gelatin powder into the warm liquid, stirring steadily to ensure it fully dissolves without clumps. If using, add the fresh squeezed orange juice at this stage and mix well.
- Strain Mixture. Pour the mixture through a fine mesh sieve to remove any undissolved gelatin bits, ensuring a smooth gummy texture.
- Mold and Chill. Pour the strained liquid into silicone molds and refrigerate them for several hours, or until the gummies are firm enough to unmold and enjoy.
Notes
- For a vegan version, substitute gelatin with agar-agar powder, keeping in mind the setting and texture may differ.
- You can adjust the sweetness and citrus intensity by varying the amount of stevia, sweetener, and orange oil or extract.
- Light cream adds a subtle creaminess mimicking the classic creamsicle taste; full-fat cream can be used for richer flavor.
- Store gummies in an airtight container in the refrigerator for up to one week.
