Peanut Butter Date Energy Rolls are the perfect snack for anyone on the go. Packed with the natural sweetness of dates and the richness of peanut butter, these energy rolls are a simple yet powerful combination of ingredients that fuel your day. Whether you’re looking for a pre-workout snack or an afternoon pick-me-up, these energy rolls are a healthy, satisfying option.

Ingredients

1 cup pitted dates

1/2 cup peanut butter

1/2 cup rolled oats

1/4 cup chia seeds (optional)

1/4 cup unsweetened shredded coconut (optional)

1 tsp vanilla extract

Instructions

  1. In a food processor, combine the dates, peanut butter, oats, chia seeds, and vanilla extract. Pulse until the mixture starts to come together.
  2. If using shredded coconut, add it in and pulse a few more times until everything is fully combined.
  3. Scoop out tablespoon-sized portions of the mixture and roll them into small balls with your hands.
  4. Place the energy rolls on a tray lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  5. Store in an airtight container in the fridge.

Notes

  1. Storage: Store the energy rolls in an airtight container in the fridge for up to a week.
  2. Freezing: You can also freeze them for longer storage. Place them in a freezer-safe container or bag, and they will last for up to 3 months.
  3. Reheating: These energy rolls can be eaten straight from the fridge or freezer. No need to reheat them.
  4. Variations: Add nuts or seeds for extra crunch, dip in chocolate for a decadent touch, or add cinnamon for a flavor boost.
