Description

This classic pear pie recipe features a flaky pie crust filled with a cinnamon-spiced pear mixture, topped with a buttery crumb topping. It’s a comforting and delicious dessert perfect for fall and winter, combining tender pears and warm spices for a delightful treat.

Ingredients

Pie Crust

  • 1 store-bought or homemade pie crust

Filling

  • 1/4 cup (50 grams) granulated sugar
  • 1/4 cup (50 grams) brown sugar
  • 1/4 cup (35 grams) all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 6 firm pears, peeled and sliced 1/4-inch thick (peeling optional)

Crumb Topping

  • 1/3 cup all-purpose flour
  • 3 Tablespoons salted butter, melted
  • 1/3 cup granulated sugar
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and place a baking sheet on the middle rack to catch any drips and ensure even cooking.
  2. Prepare Pie Crust: Roll out the pie crust on a floured surface into about a 12-inch round. Fold it into halves and quarters to transfer it easily to your pie dish. Fit the crust into the dish, flute the edges if desired, and refrigerate until ready to fill.
  3. Make Pear Filling: In a large bowl, combine 1/4 cup granulated sugar, 1/4 cup brown sugar, 1/4 cup flour, and 1 1/2 teaspoons ground cinnamon. Add the sliced pears and toss gently to coat evenly. Let the mixture sit for 5 minutes to allow flavors to meld.
  4. Prepare Crumb Topping: In a small bowl, mix 1/3 cup flour, 3 tablespoons melted butter, 1/3 cup granulated sugar, 1/4 teaspoon cinnamon, and a pinch of salt using your fingers or a fork until the mixture becomes crumbly. Be careful not to overmix to keep the crumb topping light.
  5. Assemble the Pie: Layer the seasoned pears evenly into the chilled pie crust, leaving some of the juice behind in the bowl. Press the pears flat if necessary. Evenly sprinkle the crumb topping over the pears.
  6. Bake the Pie: Place the pie dish on the preheated baking sheet in the oven. Bake for about 50 minutes. If the crust edges brown too quickly before the filling is done, cover the edges with foil or a pie crust shield to prevent burning.
  7. Cool and Serve: Remove the pie from the oven and allow it to cool completely on a wire rack for 2 to 3 hours to let the filling thicken properly. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream for added indulgence.

Notes

  • Peeling pears is optional based on your texture preference; leaving skins on adds more fiber.
  • Use firm pears to ensure the filling holds its shape and doesn’t turn mushy.
  • If the crust starts browning too quickly, protect it with foil or a pie shield mid-bake.
  • Allow the pie to cool completely; serving it too early may result in a runny filling.
  • For a richer flavor, try adding a teaspoon of vanilla extract to the pear filling mixture.
