Description

This refreshing Pineapple Popsicle recipe combines the natural sweetness of fresh pineapple with creamy coconut milk to create a tropical frozen treat that’s perfect for hot days. Easy to make with just two main ingredients, these popsicles are a healthy and delightful dessert that you can enjoy guilt-free.

Ingredients

Ingredients

  • 1 cup fresh pureed pineapple (can substitute with canned pineapple)
  • 1 cup full-fat coconut milk

Instructions

  1. Prepare the Pineapple Puree: Peel and slice a fresh pineapple into small pieces. Place the pieces into a blender or food processor and blend for one to two minutes until smooth. Measure out 1 cup of this pineapple puree.
  2. Combine with Coconut Milk: Add 1 cup of full-fat coconut milk to the pineapple puree and stir thoroughly to combine the ingredients evenly.
  3. Freeze the Mixture: Pour the combined mixture into popsicle molds. Place the molds in the freezer and freeze overnight, or for at least 12 hours, until fully solidified.
  4. Enjoy the Popsicles: Remove the popsicles from the molds carefully and enjoy your tropical homemade treat on a warm day!

Notes

  • You can substitute canned pineapple if fresh is unavailable, but ensure it is well-drained to avoid excess liquid.
  • Full-fat coconut milk gives the best creamy texture; however, light coconut milk can be used for a lower fat option.
  • Feel free to add a teaspoon of honey or agave syrup if you prefer a sweeter popsicle.
  • To help the popsicles release easily, briefly run the molds under warm water before removing.
