- 2 – 14.1 oz packages Pillsbury Mini Pie Crusts (24 total crusts)
- Pink sanding sugar (for decoration)
Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the mini pie crusts.
- Prepare Pie Crusts: Separate the mini pie crusts and carefully place each one into the cavities of a cupcake pan. Use a fork to poke holes in the bottom of each crust to prevent bubbling during baking.
- Bake Crusts: Bake the crusts in the preheated oven for 12 to 15 minutes until lightly golden and crisp. Remove the pan from the oven and allow the crusts to cool completely before filling.
- Make Filling: In a large mixing bowl, combine the sweetened condensed milk, thawed pink lemonade concentrate, and drops of red food coloring. Mix on low speed until the mixture is thoroughly blended and has a consistent pink color.
- Fold in Whipped Topping: Gently fold in the whipped topping into the pink lemonade mixture to create a light, fluffy filling.
- Chill Filling: Refrigerate the filling mixture for about 1 hour to allow it to set and chill.
- Fill Pie Crusts: Spoon the chilled filling mixture evenly into each of the 24 cooled mini pie crusts, filling them generously.
- Pipe Whipped Topping: Place the reserved 1 cup of whipped topping into a piping bag fitted with a large star tip. Pipe a single decorative “star” dollop into the center of each filled pie bite.
- Optional Decoration: Sprinkle pink sanding sugar over the tops for added sparkle and sweetness if desired.
