Description

Pistachio Brigadeiro is a luscious twist on the traditional Brazilian sweet treat, made by cooking condensed milk with butter and salt, then blending in pistachio cream for a rich nutty flavor. After thickening to a fudge-like consistency, this mixture is chilled, rolled into balls, and coated with finely chopped pistachios, creating an irresistible bite-sized confection perfect for special occasions or an indulgent snack.

Ingredients

Brigadeiro Mixture

  • 1 x 397g can condensed milk
  • 20 g unsalted butter
  • 1⁄4 teaspoon salt
  • 100 g pistachio cream (pistachio spread)

Coating

  • 100 g pistachios, finely chopped

Instructions

  1. Combine Ingredients: In a pan, add the condensed milk, unsalted butter, and salt. Place this on medium heat.
  2. Melt Butter and Mix: Keep heating while constantly stirring until the butter melts completely and the ingredients are well combined.
  3. Add Pistachio Cream: Mix in the pistachio spread thoroughly into the mixture.
  4. Thicken the Mixture: Continue heating and stirring constantly until the mixture thickens to a fudge-like texture that pulls away from the sides of the pan.
  5. Chill the Mixture: Transfer the thickened mixture into a bowl and refrigerate for 1 to 2 hours to allow it to set firmly.
  6. Shape the Brigadeiros: Once set, scoop about 1 tablespoon of the mixture and roll into a smooth ball using your hands. If it sticks, lightly grease your hands with flavorless oil.
  7. Coat with Pistachios: Roll each ball in the finely chopped pistachios until fully coated.
  8. Serve and Enjoy: Repeat shaping and coating until all mixture is used. Serve immediately or keep refrigerated until ready to enjoy.

Notes

  • Ensure constant stirring during cooking to prevent burning and achieve a smooth texture.
  • Chilling is crucial for easy shaping and proper texture.
  • Using flavorless oil to grease hands prevents the mixture from sticking and maintains the original flavors.
  • Store brigadeiros in an airtight container in the refrigerator for up to 5 days.
  • For extra flavor, try adding a splash of vanilla extract when mixing the pistachio cream in.
