Description

These delightful Popcorn Bars combine crunchy popcorn with gooey marshmallows and a touch of vanilla, topped with colorful sprinkles and drizzled chocolate. Perfect for a sweet snack or party treat, they are quick to make and sure to satisfy your sweet tooth.

Ingredients

Popcorn Mixture

  • 12 cups popcorn
  • 2 tbsp butter
  • 10 ounces marshmallows
  • 1 tsp vanilla extract

Topping

  • ⅓ cup sprinkles, divided
  • 2 tbsp melted chocolate

Instructions

  1. Prepare Pan: Line a 9 inch by 13 inch pan with parchment paper to prevent sticking and make removal of the popcorn bars easy.
  2. Melt Marshmallows: In a stock pot over low-medium heat, melt the butter. Once melted, add the marshmallows and vanilla extract, stirring continuously until the mixture is fully melted and smooth.
  3. Combine Popcorn and Mixture: Add the popcorn to the marshmallow mixture in the pot. Stir thoroughly to ensure all popcorn pieces are evenly coated. Then add half of the sprinkles and mix gently to combine without crushing the popcorn.
  4. Press Mixture: Transfer the coated popcorn mixture to the prepared pan. Using a spatula, press it down firmly and evenly to form a compact layer for the bars.
  5. Add Toppings: Drizzle the melted chocolate evenly over the top of the pressed popcorn layer. Sprinkle the remaining sprinkles on top for a festive finish.
  6. Set and Serve: Allow the bars to rest at room temperature for 10 to 15 minutes until they are set and hold together well. Once firm, slice into bars and enjoy your delicious treat.

Notes

  • Use fresh popcorn for the best texture; avoid pre-sweetened or heavily salted varieties.
  • For a dairy-free version, substitute butter with coconut oil and use dairy-free marshmallows.
  • Press the popcorn firmly so the bars hold together properly once set.
  • Store leftover bars in an airtight container at room temperature for up to 3 days.
  • Adding chopped nuts or dried fruits can enhance flavor and texture if desired.
