Description

These Pumpkin Spice Madeleines are a delightful twist on the classic French shell-shaped sponge cakes, infused with warm autumn spices like cinnamon, ginger, nutmeg, and clove. Light, fluffy, and airy in texture, they are perfect for serving with a hot cup of tea as a cozy sweet treat during cooler days.

Ingredients

Wet Ingredients

  • 2 large eggs
  • 1 1/2 Tablespoon milk
  • 1/3 cup + 1 Tablespoon (100g) butter, melted and cooled slightly

Dry Ingredients

  • 1/2 cup (100g) sugar
  • 3/4 cup + 1 Tablespoon (100g) all-purpose flour
  • ¾ teaspoon baking powder
  • 1 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground clove
  • 1 pinch salt

Instructions

  1. Prepare the madeleine tray: Brush the madeleine tray with melted butter or cooking spray, then sprinkle a little flour over it. Shake to evenly coat the tray and tap out the excess flour to prevent sticking.
  2. Mix the batter: In a bowl, whisk together the eggs and sugar until the mixture becomes frothy. Gently whisk in the flour, baking powder, spices (cinnamon, ginger, nutmeg, clove), salt, milk, and melted butter until just combined. Avoid overmixing to maintain the light texture. Allow the batter to stand for 20 minutes to let the flavors meld and the batter slightly thicken.
  3. Preheat the oven: Set your oven to 400°F (200°C) to ensure it reaches the proper temperature before baking.
  4. Fill and bake: Carefully pour or spoon the batter into the prepared madeleine tray molds, filling each about three-quarters full. Bake in the preheated oven for 8-10 minutes, or until the madeleines have risen slightly in the middle and are fully cooked through. They should be lightly golden and spring back to the touch.
  5. Cool: Remove the madeleines from the oven, transfer them to a wire rack, and let them cool for a few minutes before serving. Enjoy them warm with your favorite tea or coffee.

Notes

  • Ensure the melted butter is cooled slightly before mixing to avoid cooking the eggs prematurely.
  • Letting the batter rest before baking helps develop texture and flavor.
  • You can substitute all-purpose flour with gluten-free flour blends if desired, but texture may vary.
  • For a stronger pumpkin flavor, consider adding a tablespoon of pumpkin puree, adjusting the liquid accordingly.
  • The madeleine tray must be properly greased and floured to prevent sticking and help with easy release.
