Instructions
- Prepare the baking dish: Heat the oven to 375 degrees F. Butter a 9-inch ceramic baking dish, 2-quart gratin dish, or a 9-inch cake pan thoroughly to prevent sticking.
- Sugar the raspberries: In a medium bowl, gently toss the raspberries with 1 tablespoon of the granulated sugar and set aside to macerate while you prepare the batter.
- Make the lavender sugar and batter: In a food processor or blender, combine the remaining 1/2 cup sugar and the dried lavender buds, then process for about 2 minutes until the lavender is mostly ground. Add the milk, crème fraiche, eggs, and a pinch of salt to the mixture and blend until combined. Finally, add the flour and pulse a few times just until incorporated to avoid overmixing.
- Assemble and bake: Arrange the sugared raspberries evenly in the buttered baking dish. Pour the prepared batter over the raspberries carefully. Bake in the preheated oven for about 35 minutes, until the top is golden brown and the center springs back lightly when pressed.
- Cool and serve: Remove from the oven and transfer the dish to a wire rack. Let the clafoutis cool for at least 15 minutes. Dust the top with confectioners’ sugar and serve slices with an optional dollop of crème fraiche or Greek yogurt.
