Description

Delightfully rich and moist Red Velvet Cookie Bars topped with creamy cream cheese icing and festive sprinkles. Combining the ease of a cake mix with the indulgence of white chocolate chips, these bars offer a perfect balance of flavors and textures ideal for any occasion.

Ingredients

Cookie Bars

  • 1 box red velvet cake mix
  • 1/2 cup butter (1 stick), softened
  • 1 large egg
  • 1/2 cup milk
  • 1 cup white chocolate chips

Cream Cheese Icing

  • 2 cups icing sugar (powdered sugar)
  • 4 tablespoons butter (1/2 stick), softened
  • 4 oz cream cheese (1/2 brick), softened
  • 2 tablespoons milk (plus up to 2 more tablespoons if needed)
  • Red and chocolate sprinkles, for topping

Instructions

  1. Prepare the Batter: In a large bowl, use a handheld or stand mixer to combine the red velvet cake mix, softened butter, egg, and milk. Mix until the batter is smooth and all ingredients are thoroughly incorporated.
  2. Batter Consistency: Note that the batter will be thick in texture, which is expected for this recipe.
  3. Prepare the Pan: Line an 8×8 inch baking pan with parchment paper and lightly spray it with nonstick cooking spray to ensure easy removal.
  4. Layer the Batter: Spread about two-thirds of the batter evenly into the prepared pan. Sprinkle the white chocolate chips over this layer, then spread the remaining batter on top. It’s okay if the top looks a bit messy; it will smooth out during baking.
  5. Bake: Place the pan in a preheated oven at 350°F (175°C) and bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean. Once baked, set the bars aside to cool completely.
  6. Make the Cream Cheese Icing: Beat together the powdered sugar, softened butter, cream cheese, and 2 tablespoons of milk until the mixture is smooth and creamy. Add up to 2 additional tablespoons of milk if needed to reach spreadable consistency.
  7. Frost and Decorate: Spread the cream cheese icing evenly over the cooled cookie bars. Finish by sprinkling red and chocolate sprinkles on top for a festive touch.
  8. Serve: Cut into bars and serve. Enjoy your delicious red velvet cookie bars!

Notes

  • Make sure both the butter and cream cheese are softened to room temperature for easy mixing.
  • Use parchment paper for lining the pan to ensure the bars come out cleanly.
  • Check doneness with a toothpick to avoid overbaking, which can dry out the bars.
  • Adjust milk in the icing to achieve your preferred frosting consistency.
  • Store leftover bars in an airtight container in the refrigerator to keep the cream cheese icing fresh.
