- 2 cups icing sugar (powdered sugar)
- 4 tablespoons butter (1/2 stick), softened
- 4 oz cream cheese (1/2 brick), softened
- 2 tablespoons milk (plus up to 2 more tablespoons if needed)
- Red and chocolate sprinkles, for topping
Instructions
- Prepare the Batter: In a large bowl, use a handheld or stand mixer to combine the red velvet cake mix, softened butter, egg, and milk. Mix until the batter is smooth and all ingredients are thoroughly incorporated.
- Batter Consistency: Note that the batter will be thick in texture, which is expected for this recipe.
- Prepare the Pan: Line an 8×8 inch baking pan with parchment paper and lightly spray it with nonstick cooking spray to ensure easy removal.
- Layer the Batter: Spread about two-thirds of the batter evenly into the prepared pan. Sprinkle the white chocolate chips over this layer, then spread the remaining batter on top. It’s okay if the top looks a bit messy; it will smooth out during baking.

- Make the Cream Cheese Icing: Beat together the powdered sugar, softened butter, cream cheese, and 2 tablespoons of milk until the mixture is smooth and creamy. Add up to 2 additional tablespoons of milk if needed to reach spreadable consistency.
- Frost and Decorate: Spread the cream cheese icing evenly over the cooled cookie bars. Finish by sprinkling red and chocolate sprinkles on top for a festive touch.
