Ingredients

Brownie Batter

  • ½ cup melted unsalted butter
  • 1 cup dark chocolate chips
  • 1 cup granulated sugar (or coconut sugar)
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder
  • ¼ cup gluten free flour
  • ½ tsp sea salt

Peanut Butter Layer

  • 9 peanut butter cups
  • ⅔ cup all natural creamy peanut butter
  • ¼ cup powdered sugar


Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line an 8 inch square baking pan with parchment paper for easy removal.
  2. Melt Chocolate and Butter: In a heatproof bowl, combine the melted unsalted butter and dark chocolate chips. Stir continuously until fully melted and smooth. Use brief 10 to 15-second intervals in the microwave if needed to help melt evenly. Set aside to cool slightly.
  3. Mix Sugar and Eggs: In a separate mixing bowl, whisk together the granulated sugar and eggs vigorously for 2 to 3 minutes until the mixture becomes light in color and frothy. Add the vanilla extract and stir to combine.
  4. Combine Chocolate and Egg Mixtures: Pour the melted chocolate and butter mixture into the egg and sugar bowl. Stir until fully blended.
  5. Add Dry Ingredients: Sift the cocoa powder, gluten free flour, and sea salt into the bowl. Gently fold the ingredients together until just combined, taking care not to overmix to maintain fudgy texture.
  6. Layer Batter: Pour half of the brownie batter into the prepared baking pan and spread evenly to cover the bottom.
  7. Add Peanut Butter Cups: Arrange the 9 peanut butter cups evenly on top of the brownie batter layer in the pan.
  8. Prepare Peanut Butter Layer: In a small bowl, stir together the creamy peanut butter and powdered sugar until smooth. Spread this mixture evenly over the peanut butter cups layer, smoothing it out carefully.
  9. Top with Remaining Batter: Pour the remaining half of the brownie batter over the peanut butter layer. Smooth the top evenly with a spatula.
  10. Bake: Place the pan in the preheated oven and bake for 33 to 36 minutes. Check doneness by inserting a toothpick into the center – it should come out mostly clean with some moist crumbs.
