Reese’s Peanut Butter Chocolate Chip Cookie Bites are a delightful combination of rich peanut butter, gooey chocolate, and Reese’s peanut butter cups, wrapped in a small, bite-sized treat. Perfect for a quick snack or party dessert.
Ingredients
1 cup peanut butter
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups chocolate chips
8 Reese’s peanut butter cups, chopped into small pieces
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, beat together the peanut butter, butter, granulated sugar, and brown sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Gently fold in the chocolate chips and chopped Reese’s peanut butter cups.
- Using a tablespoon or small cookie scoop, drop rounded portions of dough onto the prepared baking sheet. Leave space between each cookie bite to allow for spreading.
- Bake for 8-10 minutes or until the edges are golden and the cookies have set. Be careful not to overbake, as they will continue to cook as they cool.
- Allow the cookie bites to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Store cookie bites in an airtight container at room temperature for up to 5 days. They also freeze well for up to 3 months.
- For a fun twist, use mini Reese’s cups or Reese’s Pieces instead of regular-sized cups.
- To enjoy them warm, microwave for 10-15 seconds or reheat at 300°F (150°C) for about 5 minutes.
