Description

Reese’s Peanut Butter Chocolate Chip Cookie Bites are a delightful combination of rich peanut butter, gooey chocolate, and Reese’s peanut butter cups, wrapped in a small, bite-sized treat. Perfect for a quick snack or party dessert.


Ingredients

1 cup peanut butter

1/2 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups chocolate chips

8 Reese’s peanut butter cups, chopped into small pieces


Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, beat together the peanut butter, butter, granulated sugar, and brown sugar until smooth and creamy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Gently fold in the chocolate chips and chopped Reese’s peanut butter cups.
  7. Using a tablespoon or small cookie scoop, drop rounded portions of dough onto the prepared baking sheet. Leave space between each cookie bite to allow for spreading.
  8. Bake for 8-10 minutes or until the edges are golden and the cookies have set. Be careful not to overbake, as they will continue to cook as they cool.
  9. Allow the cookie bites to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  1. Store cookie bites in an airtight container at room temperature for up to 5 days. They also freeze well for up to 3 months.
  2. For a fun twist, use mini Reese’s cups or Reese’s Pieces instead of regular-sized cups.
  3. To enjoy them warm, microwave for 10-15 seconds or reheat at 300°F (150°C) for about 5 minutes.
