Ingredients
4–5 medium-sized potatoes, diced
200g (7 oz) feta cheese, block
5 cloves garlic, peeled
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon black pepper
Fresh parsley (optional for garnish)

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

In a large mixing bowl, toss the diced potatoes with olive oil, dried oregano, salt, and pepper, ensuring the potatoes are evenly coated.

Spread the seasoned potatoes onto the prepared baking sheet in a single layer.

Place the whole garlic cloves and block of feta cheese in the center of the baking sheet with the potatoes.
