Ingredients

45 medium-sized potatoes, diced

200g (7 oz) feta cheese, block

5 cloves garlic, peeled

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon salt

1 teaspoon black pepper

Fresh parsley (optional for garnish)


Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

  • In a large mixing bowl, toss the diced potatoes with olive oil, dried oregano, salt, and pepper, ensuring the potatoes are evenly coated.

  • Spread the seasoned potatoes onto the prepared baking sheet in a single layer.

  • Place the whole garlic cloves and block of feta cheese in the center of the baking sheet with the potatoes.

  • Roast in the preheated oven for 35-40 minutes or until the potatoes are golden and crisp, and the feta has softened and slightly browned.

  • Remove the baking sheet from the oven. Smash the garlic cloves slightly with the back of a spoon and stir everything together, allowing the roasted garlic to blend with the potatoes and feta.

  • Optional: Garnish with fresh parsley for added color and flavor.
