Ingredients
- 2 large sweet potatoes, sliced into ½-inch thick rounds

 - 1/2 cup feta cheese, crumbled
 - 2 tbsp honey (or more to taste)
 - 1 tbsp fresh thyme or parsley, chopped (optional, for garnish)
 
Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- Wash and scrub the sweet potatoes. Slice them into ½-inch thick rounds.
 - Toss the rounds with olive oil, salt, and black pepper. Arrange them in a single layer on the prepared baking sheet.
 - Roast for 25-30 minutes, flipping halfway through, until caramelized and fork-tender.
 - Remove from the oven and let cool slightly. Arrange on a serving platter.
 - Crumble feta cheese over each round.
 - Drizzle with honey just before serving.
 - Garnish with chopped fresh thyme or parsley if desired.
