Ingredients

  • 4 bone-in, skin-on chicken thighs (or breasts)
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 2 garlic cloves, minced
  • 1 small shallot (or 1/4 onion), finely chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh rosemary, chopped (plus more for garnish)
  • 1 cup apple cider (unfiltered, not vinegar)
  • 1/2 cup chicken broth
  • 1 small apple, thinly sliced (optional)

Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear chicken skin-side down for 5–6 minutes until golden. Flip and cook 4–5 minutes more. Remove and set aside.
  3. Reduce heat to medium. Add shallot and garlic, sauté 2–3 minutes until soft and fragrant.
  4. Stir in Dijon mustard and chopped rosemary. Add apple cider and chicken broth, scraping up any browned bits from the bottom.
  5. Return chicken to pan, skin-side up. Optional: add apple slices around the chicken.
  6. Cover and simmer for 20–25 minutes until chicken is fully cooked (internal temp 165°F).
  7. Uncover and simmer 5–10 minutes more to reduce sauce, if desired.
  8. Garnish with fresh rosemary and serve warm.
