Description

Sausage Egg & Cheese Roll-Ups are a quick, savory breakfast or snack option made with seasoned sausage, scrambled eggs, and melty cheese wrapped in a soft tortilla. This dish is perfect for busy mornings or meal prep.


Ingredients

1 lb breakfast sausage

6 large eggs

1/2 cup shredded cheddar cheese

1/4 cup milk

4 flour tortillas (8-inch)

Salt and pepper to taste

1 tbsp butter (for cooking)


Instructions

  1. In a large skillet over medium heat, cook the sausage until browned, breaking it up into small pieces as it cooks. Once fully cooked, drain any excess grease and set the sausage aside.
  2. In a bowl, whisk together the eggs, milk, salt, and pepper. In the same skillet, melt the butter over medium heat. Pour the egg mixture into the skillet and scramble the eggs until cooked through and fluffy.
  3. Once the eggs are cooked, add the cooked sausage back to the pan and mix them together. Remove from heat.
  4. Lay out the tortillas on a flat surface. Divide the sausage and egg mixture evenly between the tortillas, placing it in the center of each. Sprinkle shredded cheddar cheese on top.
  5. Roll up each tortilla tightly, folding in the sides to secure the filling.
  6. For a crispy finish, place the rolled-up tortillas back in the skillet and cook them for 1-2 minutes on each side until golden brown and slightly crispy. Serve warm.
