Ingredients
- 1 lb smoked sausage or kielbasa, sliced
- 6 medium Russet or Yukon Gold potatoes, peeled and thinly sliced
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 2 cups shredded cheddar cheese, divided
- 1 can (10.5 oz) cream of chicken soup (or mushroom soup)
- 1/2 cup milk or heavy cream
- 1/2 cup sour cream (optional)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tbsp olive oil or butter (optional, for sautéing sausage)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Optional: In a skillet over medium heat, sauté sliced sausage in olive oil or butter until browned. Set aside.
- Peel and thinly slice the potatoes. Chop onion and mince garlic.
- In a bowl, mix cream of chicken soup, milk, sour cream (if using), garlic, salt, pepper, and paprika until well combined.
- Grease the slow cooker insert lightly with oil or cooking spray.
- Layer ingredients in the slow cooker: start with a layer of sliced potatoes, then sausage, onion, a sprinkle of cheese, and a few spoonfuls of the sauce. Repeat layers until all ingredients are used.
- Top with the remaining cheese and cover.
- Cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until potatoes are fork-tender and cheese is melted and bubbly.
- Garnish with chopped parsley before serving, if desired.
