Description

Ingredients

  • 1 lb smoked sausage or kielbasa, sliced
  • 6 medium Russet or Yukon Gold potatoes, peeled and thinly sliced
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 cups shredded cheddar cheese, divided
  • 1 can (10.5 oz) cream of chicken soup (or mushroom soup)
  • 1/2 cup milk or heavy cream
  • 1/2 cup sour cream (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 tbsp olive oil or butter (optional, for sautéing sausage)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Optional: In a skillet over medium heat, sauté sliced sausage in olive oil or butter until browned. Set aside.
  2. Peel and thinly slice the potatoes. Chop onion and mince garlic.
  3. In a bowl, mix cream of chicken soup, milk, sour cream (if using), garlic, salt, pepper, and paprika until well combined.
  4. Grease the slow cooker insert lightly with oil or cooking spray.
  5. Layer ingredients in the slow cooker: start with a layer of sliced potatoes, then sausage, onion, a sprinkle of cheese, and a few spoonfuls of the sauce. Repeat layers until all ingredients are used.
  6. Top with the remaining cheese and cover.
  7. Cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until potatoes are fork-tender and cheese is melted and bubbly.
  8. Garnish with chopped parsley before serving, if desired.
