Ingredients
Crust
- 1 ½ cups graham cracker crumbs (about 10 full crackers)
- 6 tablespoons melted butter
- ¼ cup granulated sugar
Chocolate Filling
- 1 cup heavy cream
- 8 ounces semi-sweet chocolate, chopped (or chocolate chips)
- 1 teaspoon vanilla extract
- 2 eggs
- ¼ teaspoon salt
Topping
- 2 cups mini marshmallows
Instructions
- Make the Crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until the mixture is evenly moistened. Press this mixture firmly into a 9-inch pie pan, making sure to press it up along the sides to form an even crust.
- Bake the Crust: Place the crust in the oven and bake for 10 minutes. Once baked, remove and allow it to cool slightly while you prepare the filling.
- Prepare the Chocolate Filling: Heat the heavy cream in a small saucepan over medium heat until it’s hot but not boiling. Remove from heat and immediately stir in the chopped semi-sweet chocolate until it’s fully melted and the mixture is smooth.
- Mix the Filling: Let the chocolate mixture cool for about 5 minutes, then whisk in the vanilla extract, eggs, and salt until fully incorporated and smooth.
- Assemble and Bake the Pie: Pour the chocolate filling into the pre-baked graham cracker crust. Return the pie to the oven and bake for 20 to 25 minutes, or until the center is just set but still slightly jiggly. Remove from the oven and let the pie cool for 30 minutes.
- Toast the Marshmallow Topping: Evenly spread the mini marshmallows over the cooled pie. Increase the oven temperature to broil and place the pie on the top rack. Broil for 1 to 2 minutes, watching very closely, until the marshmallows turn golden brown and toasted.
- Serve: Allow the pie to cool for about 10 minutes before slicing. Serve warm to enjoy the gooey marshmallows and chocolate, or refrigerate if you prefer a chilled version.
Notes
- Watch the marshmallows carefully while broiling to prevent burning.
- The pie can be refrigerated and served chilled for a firmer texture.
- You can substitute the semi-sweet chocolate for milk or dark chocolate depending on your preference.
- For easier melting, chop the chocolate finely or use chocolate chips.
- Using a glass or metal pie pan will work, but a metal pan may brown the crust slightly better.
