Description

Spaghetti with Garlic & Spinach is a quick and wholesome dish made with simple pantry staples like spaghetti, garlic, olive oil, and fresh spinach. It’s light, flavorful, and perfect for busy weeknights or a healthy, satisfying meal any time.


Ingredients

  1. 8 oz spaghetti
  2. 5 oz fresh spinach
  3. 4 cloves garlic, thinly sliced
  4. 2 tbsp olive oil
  5. Salt, to taste
  6. Black pepper, to taste
  7. 1/4 tsp crushed red pepper flakes (optional)
  8. Grated Parmesan cheese, for serving (optional)

Instructions

Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente. Reserve ½ cup of pasta water and then drain the pasta.

  1. While the pasta cooks, heat olive oil in a large skillet over medium heat.
  2. Add sliced garlic and cook for 1-2 minutes, stirring frequently, until fragrant and lightly golden. Be careful not to burn the garlic.
  3. Add the spinach to the skillet and sauté for 2-3 minutes until wilted.
  4. Toss the cooked spaghetti into the skillet with the garlic and spinach. Add a splash of reserved pasta water to help coat the noodles.
  5. Season with salt, black pepper, and crushed red pepper flakes if using. Toss well to combine.
  6. Serve immediately, topped with grated Parmesan cheese if desired.
