Ingredients
- 8 lamb chops (rib or loin)

- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup pomegranate juice
- 2 tablespoons honey or maple syrup

- 1/4 cup pomegranate seeds (for garnish)
Instructions
- In a small bowl, combine cumin, coriander, paprika, garlic powder, salt, and pepper. Rub spice blend evenly over both sides of lamb chops.
- Heat olive oil in a skillet over medium-high heat. Sear lamb chops for 3–4 minutes per side, until golden brown and cooked to preferred doneness (135°F for medium-rare, 145°F for medium). Remove and let rest.
- In the same skillet, add pomegranate juice, honey, and balsamic vinegar. Simmer 5–7 minutes, stirring, until reduced to a thick glaze.
- Return lamb chops to skillet, spooning glaze over to coat evenly.
- Transfer to a platter, garnish with fresh thyme and pomegranate seeds, and serve hot.
