Description

Spiced Rum Cake is a moist, buttery bundt cake infused with warm spiced rum and topped with a sweet, boozy glaze. Rich in flavor and simple to make, it’s perfect for holidays, celebrations, or anytime you want a crowd-pleasing dessert.

Ingredients

  • 1 box yellow cake mix
  • 1 (3.4 oz) package instant vanilla pudding mix
  • 4 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 1/2 cup water
  • 1/2 cup spiced rum
  • 1/2 cup chopped pecans or walnuts (optional)

For the glaze:

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup spiced rum

Instructions

  1. Preheat oven to 325°F (165°C). Grease and flour a bundt pan.
  2. Sprinkle chopped nuts into the bottom of the pan, if using.
  3. In a large bowl, mix cake mix, pudding mix, eggs, oil, water, and spiced rum. Beat until smooth and well blended.
  4. Pour the batter into the prepared bundt pan.
  5. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Meanwhile, make the glaze: In a saucepan, combine butter, sugar, and water. Bring to a boil and simmer for 4–5 minutes, stirring constantly. Remove from heat and stir in spiced rum.
  7. Let the cake cool in the pan for 10 minutes, then invert onto a serving plate.
  8. Slowly spoon or brush the warm glaze over the cake, allowing it to soak in. Repeat until all glaze is used.
  9. Let sit for at least 30 minutes before serving to absorb glaze fully.

Notes

  • Use coconut rum or flavored rums for a twist.
  • Let the cake rest overnight for even better flavor and texture.
  • Glaze can be applied while the cake is still in the pan for a mess-free soak.
  • Add spices like cinnamon or nutmeg to enhance the warmth of the rum.
  • Use rum extract and juice/water for an alcohol-free version.
