Instructions
- Preheat Oven: Preheat your oven to 200°C (392°F) to prepare for baking the quiche crust and filling.
- Boil Potatoes: Place the peeled and sliced potatoes in salted water and boil until tender when pierced with a fork. Drain the water and set the potatoes aside.
- Sauté Spinach: Heat 1 teaspoon of butter in a pan over medium heat, add the finely chopped spinach, and cook until wilted and softened. Set aside to cool slightly.
- Prepare Pie Crust: Roll out the savory shortcrust pastry and line it over your chosen pie mold or dish. Prick the base of the pastry with a fork to prevent puffing up and bake in the preheated oven for 15 minutes to blind bake the crust.
- Make Custard Filling: In a bowl, whisk together the eggs, salt, pepper, and milk until the mixture is smooth and well combined.
- Assemble Quiche: Remove the baked pie crust from the oven. Layer the base evenly with the boiled potatoes, followed by the sautéed spinach, and then sprinkle the grated cheese on top.
- Pour Egg Mixture: Carefully pour the egg and milk custard mixture over the layered ingredients in the crust, ensuring even coverage.
- Bake Quiche: Place the assembled quiche back into the oven and bake for 15 to 20 minutes until the custard is set, and the top is lightly golden.
- Cool and Serve: Remove the quiche from the oven and allow it to cool for 5 minutes to firm up. Unmould, slice, and serve warm or at room temperature.
