Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 small onion, chopped

2 garlic cloves, minced

4 cups fresh spinach, chopped

1/2 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

1 tablespoon fresh parsley, chopped (optional)


Instructions

  • Preheat your oven to 375°F (190°C).

  • Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until softened and fragrant.

  • Add the chopped spinach to the skillet and cook for 2-3 minutes until wilted. Remove from heat and cool for a few minutes.

  • In a bowl, mix the cooked spinach, cream cheese, Parmesan, mozzarella, oregano, salt, black pepper, and red pepper flakes (optional) until fully combined.

  • Using a sharp knife, carefully cut a pocket into each chicken breast, making sure not to cut all the way through. Season with salt and pepper.

  • Stuff each chicken breast with the spinach mixture, ensuring even distribution.

  • Heat a large oven-safe skillet over medium-high heat, adding a little more olive oil. Brown the stuffed chicken breasts for 2-3 minutes on each side until golden brown.

  • Transfer the skillet to the oven and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

  • Let the chicken rest for 5 minutes before serving.
