These Steak & Cheese Quesadillas offer the perfect balance of savory steak, melted cheese, and a crispy tortilla. Quick and easy to make, this recipe is ideal for lunch, dinner, or a savory snack. Customize it with your favorite veggies and sauces for a meal everyone will love.
Ingredients
1 lb flank steak or skirt steak, thinly sliced
1 tablespoon olive oil
1 medium onion, sliced
1 bell pepper, sliced (optional)
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon paprika
Salt and pepper, to taste
4 large flour tortillas
2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
1 tablespoon butter (for grilling)
Instructions

Heat olive oil in a large skillet over medium-high heat. Add steak and season with salt, pepper, garlic powder, chili powder, and paprika. Cook for 3-4 minutes until browned and cooked through. Remove steak and set aside.

In the same skillet, sauté onions (and bell peppers) for 2-3 minutes until softened. Remove from heat.

In a separate skillet, place a tortilla over medium heat. Sprinkle a small amount of shredded cheese on one half of the tortilla.

Add a portion of steak and sautéed onions (and peppers) on top of the cheese, then add more cheese on top of the steak. Fold the tortilla in half.

Grill the quesadilla for 2-3 minutes per side until golden brown and the cheese is melted. Remove from heat and cut into wedges.

Repeat with remaining tortillas and filling.
