Ingredients
1 box of vanilla cake mix
1/3 cup of vegetable oil
3 eggs
1/2 cup of water
8 oz cream cheese, softened
1/4 cup of granulated sugar
1 tsp vanilla extract
1 cup fresh strawberries, chopped
1/4 cup of brown sugar
1 tsp ground cinnamon
1/2 cup all-purpose flour
1/4 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- In a large bowl, mix the cake mix, vegetable oil, eggs, and water. Beat until smooth.
- In another bowl, combine the softened cream cheese, sugar, and vanilla extract until smooth.
- Pour half of the cake batter into the prepared pan and spread it evenly.
- Drop spoonfuls of the cream cheese mixture on top of the cake batter and spread gently.
- Add chopped strawberries on top of the cream cheese mixture.
- In a separate bowl, mix together the brown sugar, cinnamon, and flour to make the streusel topping. Stir in melted butter until crumbly.
- Sprinkle the streusel evenly over the cake and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Let the coffee cake cool before serving.
