Description

This Strawberry Cinnamon Cheesecake Coffee Cake is the perfect blend of rich, creamy cheesecake, tangy strawberries, and a touch of cinnamon spice. With a moist cake base and a crunchy cinnamon streusel topping, it’s a delightful treat for breakfast, brunch, or dessert.

Ingredients

1 box of vanilla cake mix

1/3 cup of vegetable oil

3 eggs

1/2 cup of water

8 oz cream cheese, softened

1/4 cup of granulated sugar

1 tsp vanilla extract

1 cup fresh strawberries, chopped

1/4 cup of brown sugar

1 tsp ground cinnamon

1/2 cup all-purpose flour

1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a large bowl, mix the cake mix, vegetable oil, eggs, and water. Beat until smooth.
  3. In another bowl, combine the softened cream cheese, sugar, and vanilla extract until smooth.
  4. Pour half of the cake batter into the prepared pan and spread it evenly.
  5. Drop spoonfuls of the cream cheese mixture on top of the cake batter and spread gently.
  6. Add chopped strawberries on top of the cream cheese mixture.
  7. In a separate bowl, mix together the brown sugar, cinnamon, and flour to make the streusel topping. Stir in melted butter until crumbly.
  8. Sprinkle the streusel evenly over the cake and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the coffee cake cool before serving.

Notes

  1. Fruit Variations: Swap out the strawberries for other fruits like raspberries, blueberries, or peaches for a different flavor twist.
  2. Nutty Streusel: Add chopped pecans or walnuts to the streusel topping for extra crunch and flavor.
  3. Gluten-Free: Use a gluten-free cake mix to make this recipe gluten-free.
  4. Storage: Store any leftover coffee cake in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to 1 week.
  5. Reheating: To reheat, place a slice in the microwave for 20-30 seconds, or reheat in the oven at 300°F (150°C) for 10 minutes.
